From Julie M. Serves 4-6 as a main dish
- 1 package (8 oz.) elbow macaroni
- 2 cups grated sharp cheddar (other cheeses can be mixed in)
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 1 tsp salt
- 1/8 tsp pepper
- Optional: bacon bits or ground flax sprinkled on top
Oven 350.
Cook macaroni, drain
In 1 1/2 quart shallow baking dish alternate layers of macaroni and 1 1/2 cups cheese for a total of four layers.
Prepare sauce. Melt butter, stir in flour gradually, gradually stir in milk, then salt and pepper. Bring to boil stirring constantly. Boil one minute.
Pour sauce over cheese. Top with remaining cheese and choice of crunchy toppings. Bake 15-20 minutes, until cheese is melted and slightly browned.
