4 russet potatoes, peeled and boiled 20 minutes, then drained & mashed up with a tablespoon of butter
As potatoes are boiling, preheat the oven to 425 degrees, lightly grease a pie plate, and combine these ingredients in a bowl and stir:
- 2 eggs
- 12 ounces shredded mozzarella cheese
- 1/4 cup chopped onion
- 1 1/2 cups grated zucchini
Stir in the hot mashed potatoes!
Grate some bread crumbs into the bottom of the pie plate….and pour in the potato/egg/zucchini mixture over the crumbs, smoothing the mixture down.
Now grate some bread crumbs over the top of the pie and add 4-5 small pats of butter around the surface.
Pop it in the oven about 30-35 minutes til nicely brown.
Serve in slices, with salsa atop the “pie.”
