Dressing
- 1/4 cup honey
- 1/2 cup lemon juice
- 1 small onion
- 1 Tbsp. Dijon mustard
- 2/3 cup olive oil
- 1/2 tsp salt
- 1 Tbsp. poppy seeds
Salad
- 2 heads Romaine lettuce
- 1# baby spinach
- 1 ½ cups shredded Swiss cheese
- 1 ½ cups cashews (or other nuts)
- 1/2 cup dried cranberries
- 2 apples, cubed
- 2 pears, cubed
In blender or food processor, combine all dressing ingredients except the oil and the poppy seeds, blend. With machine running, add oil in a thin, steady stream, processing till smooth and thick. Add poppy seeds, process just to mix.
In large bowl, toss all salad ingredients together.
Shortly before serving, pour dressing over salad and toss to coat.
